Fermentation: 2 day cold soak, 10 day fermentation.
Time in oak: 18 months all used French oak (mixture of once & twice used).
Bottling: Winter of 2005
Cases produced: 50 cases – that’s it!
Bonus Information:
A true cult wine. There were only 80 acres of producing vines in the state of California. We love this grape for its heritage – as a single variety in the Inglenook years and as the backbone of Hearty Burgundy. Moreover, we love this wine for its Intensity and distinct character. Move over Cabernet!
